Viticulture is the cultivation and harvesting of grapes. The Unit will discuss the legal aspects which govern the production of quality grapes for the production DOK; IGT and Table wines.

The Unit explains the location & orientation of vineyard, soil morphology and trellising systems; will focus in detail on the vegetative and reproductive cycle, shoot system and vine canopy, vine physiology and yearly growth cycle; bud break and period of growth, bloom, berry set, v茅raison; ripening and berry composition. Pruning techniques, irrigation, fertilzers and pest management will be discussed in detail.

The Unit includes a field trip where students will get some hands-on, practical exposure.

By the end of the Unit the student will be able to:

  • Describe how vines grow;
  • Explain how to set up a vineyard;
  • Discuss how to take care of the vineyard.

Learning Outcomes: Skills

By the end of the Unit the student will be able to:

  • Set up a vineyard starting from an empty field;
  • Prune the vines to ensure the desired quality and quantity of fruit;
  • Take care of the vineyard to produce healthy fruit.
